Benedetto Cavalieri pasta is produced by a fifth generation family company in Puglia, Italy. The slow, delicate method of kneading they employ allows for even distribution of gluten throughout the pasta. The pasta shapes are extruded using bronze dies that give the pasta a rough textured surface on which the sauce clings to.
Literally translated as "little tongues", best for dishes with lots of sauce, like cream and seafood sauces.
