This paté only uses Taggiasca olives harvested and processed on the same day, carefully selected by hand. The olives are washed for a month with only water and then continue fermentation in brine, to which they add thyme and bay leaves. Once ready, they are stoned and peeled and then crushed to become a fantastic pâté, preserved in Taggiasca extra virgin olive oil.
