Benedetto Cavalieri pasta is produced by a fifth generation family company in Puglia, Italy. The slow, delicate method of kneading they employ allows for even distribution of gluten throughout the pasta. The pasta shapes are extruded using bronze dies that give the pasta a rough textured surface on which the sauce clings to.
"Little wheels" are a crowd favorite, best with smooth cream sauces or as pasta salad.
