
François Doucet's Billes Gourmandes ("gourmet marbles") are an assortment of three pâtes de fruits—abricot orangés de Provence (apricot), framboise (raspberry), and myrtille (blueberry)—and jellied Provençal lavender honey in the shape of shimmering, sugar-dusted gems.
These jelly treats are traditionally enjoyed as part of an after-dinner or tea-time dessert course. Pâtes de Fruits tolerate heat without melting or blooming.
