A special blend of durum wheat gives this organic pasta its unique taste and texture. Made in southern Italy in Puglia using traditional artisan methods, the dough is extruded through bronze dies and then allowed to dry for 2 to 3 days at low temperatures. The long drying process creates a porous pasta, which will significantly expand when cooked. The rainbow pasta gets its colors from vegetables like beets, turmeric, red pepper, spinach and tomatoes and maintains its shape and color when cooked.
