Soak for 12 hours. Drain . Add water or vegetable stock. Bring to the boil, and then lower the heat and simmer for 60 minutes. Season with vegetables, extra virgin olive oil, salt, and pepper.
We like to add a halved onion, a bay leaf, and a whole carrot for flavor when we are oooking the soup, then remove at the end of cooking. Then saute carrots and chopped kale for several minutes in a bit of olive oil and add to the soup at the end of cooking. Sprinkle with finely chopped fresh parsley when serving. This adds a delicious flavor and color.) Drizzle with a good olive oil. Perfect!
